Flying helicopters like the littlebird during the day is unbelievably hard because the MFD is shadowed out by the sun. Is there a way to turn on lighting on or make is so that I can see the MFD and know my level. It's making flying certain helicopters extremely hard because I cannot land properly.

You can't , you can't do anything with MFD - try using the HUD to land
There's one place for One Snake and for One BigBoss !!!
The HUD tells you everything you need to know for landing. Just use it instead of the MFD.
What are you looking for on the MFD that's not on the HUD?
