NAXASTA tipped me off about the X2VGA adapter, which converts the video output from the X-Box to the game's max-res on a VGA monitor.
I bought an X2VGA adapter off Ebay (x2vga.com no longer has them in stock) and am quite pleased with the crystal-clear graphics it delivers when using a computer monitor as your faux HDTV screen.
OFP:E's graphics are at once both improved and exposed by this set-up. Lots of detail is revealed, but sometimes that isn't a good thing. Still, it is much better than watching it using those 3 cables. Frame rate drops are also much more apparent than they were.
Still, all-in-all, you're getting OFP:E at its graphical best, at least until the game becomes backwards-compatible on the 360.
I went back to try out other games, to enjoy their graphics. Rainbow Six 3: Lockdown and Halo are much more beautiful.
This will certainly do until I get a 360.
Only problem with it is that the X-Box Dashboard is practically unreadable, distorted and blurry. Once you load a game, though, it's a whole new world.
I highly recommend this device to anyone who has a computer monitor and not enough money for an HDTV.
Audio pumps out from the adapter from a female microphone jack receptacle. I'm not sure, but I'm thinking that the Creative Surround Sound system that I bought ages ago may provide me the sound I need; otherwise, you can use headphones, though volume seems to be rather low.
